TYPES OF TEA AND BEST BREWING TIPS

Methods of preparing tea will vary as it is an individual’s personal choice and preference that will brew the” perfect” cup. There is no “right way” to prepare and serve but we at Pure Leaves would like to assist by offering a few points to help enhance the true flavours and characteristic of the fine teas and blends that we have to offer.

Water Choice:
Use fresh pure water every time. Tap water should be avoided as it may contain chlorine and fluoride which can greatly affect the true characteristics and flavour of your choice tea. Even hot tap water used to speed up the boiling process will add impurities from your homes water heater. Bottled waters are different as purified and spring waters differ in mineral content.
Just remember choosing your water to capture the flavour of your tea is a personal choice, just as is the Pure Leaves quality blend of black tea, green tea or infusion that you choose.


BLACK TEA
Black tea is the most common form of tea drunk worldwide. Known as the “red” teas in China, the process begins with plucking young green tea leaves which are then placed on racks and air blown to remove approximately one third of their moisture. They are then twisted and rolled to break up the leaf to allow the natural process of oxidation or “ripening” to take place. Oxidation is the natural release of enzymes which are accelerated by exposure to increased heat over fire or commercial ovens. Roasting and rolling is repeated turning the leaves a dark coppery colour. It is this process which develops the leaves special flavour and desired colour. After firing, the tea is sorted into leaf quality and size. These high-grade teas are suitable for cup or pot to be enjoyed individually or with a group of friends. They do not require milk but milk may be added with a little sugar to sweeten if desired.

Measure and Brewing:
Boil the water. Pure fresh water is best.
Pre warm the cup or teapot with boiling water before use and empty.
2.5gm ( 1 teaspoon) per 200ml cup. If using a pot, size to suit number of cups needed.
You may vary the amount of Pure Leaves tea to suit your taste.
Pour boiled water over leaves and start timing the brew. Small-leaf teas need 2-3 minutes . Large-leaf high-grade teas take longer, 3-4 minutes . Please remember this is only a guide as distinct character and taste is an individual choice. Longer brewing times will give you a stronger brew. However don’t over-brew as the tea may/will become bitter.
Remove infuser and leaves from cup/teapot, or strain and serve with milk and or sugar if desired.

GREEN TEA
Green Tea has been used by the Chinese for centuries and contains many vitamins and minerals used to refresh and aid the body. Unlike black teas, green tea is the least processed and thus contains the most antioxidants. Green tea is made by briefly steaming the just harvested leaves making them soft and pliable thus preventing them from oxidation and colour change. After steaming the leaves are spread out and ‘fired’ (dried with hot air) until they are crisp. Green tea is low in caffeine and high in vitamin C making it good for the digestive. Green tea is known to result in a greenish-yellow colour enhancing the slightly astringent flavours and aromas of the fresh tea leaves.

Measure and Brewing
Choose pure fresh water.
Boil the water and allow to cool for 1-2 minutes to 80-85 deg C.
Pre warm the teapot and drinking bowl/cup.
½ level teaspoon of tea per 100ml small drinking bowl/cup.
2.5 gm ( 1 teaspoon) of tea per 200ml large drinking bowl/cup.
You may vary the amount of Pure Leaves tea to vary the taste and tea strength.
Japanese greens only need 30 seconds – 2 minutes to brew.
Most China greens need longer 3-4 minutes.
Pour hot water 80-85 deg over the leaves and time the brew. After the correct brewing time, serve and drain the leaves.
Green teas take no sugar or milk.
Please note: Do not use boiling water as you risk scalding the delicate leaf qualities which give green tea its distinct flavour and character.
